Simple Rice Pilaf

If you are looking for a quick and simple rice dish, this is it. In just one pan, this rice comes together in no time and is the perfect match for any of your favorite main dishes. You can also customize it by switching up the spices to your favorites.


Recipe yields 4 servings

Ingredients
2 tbsp olive oil
1 medium yellow onion
1 cup long grain white rice
3/4 cup water
3/4 cup chicken stock
1 tsp fresh thyme (or 1/2 tsp dried)
1 bay leave
Salt & black pepper, to taste
1 tbsp fresh parsley


Finely chop the onion.


Heat oil in a medium skillet and add onion. Cook for 3-4 minutes until translucent and fragrant.


Add white rice to the skillet and cook for 2-3 minutes until "toasty."


Add water, chicken stock and spices. Stir and bring to a boil. Reduce heat, cover and cool for 15 minutes.


When the majority of the liquid is gone and the rice is plump, turn off the heat and allow rice to sit for 2 minutes, without removing the cover. Transfer rice to a serving bowl and fluff with a fork. Mix in freshly chopped parsley. I served mine along side Chicken Francaise but it is so simple it can literally be paired with any of your favorite dishes. Enjoy!
