Pumpkin Snack Bars

Are you totally obsessed with my Super Packed Snack Bars? Well then you are going to love these. Here is my spin on my classic snack bar with a pumpkin twist perfect for fall. If you are as pumpkin crazed as I am, I hope you try them out and enjoy!


Recipe yields about 12 snack bars

Ingredients
1/2 cup unsalted butter
1 cup quick oats
1 cup canned pumpkin
2 tsp pumpkin pie spice (See here for recipe)
1 cup chocolate chips
1 cup butterscotch chips
14 oz can sweetened condensed milk
1 cup chopped pecans


Preheat the oven to 350 degrees. Place your butter in a microwavable bowl and melt. Coat the bottom and all sides of an 8"x8" baking pan with the melted butter.


On top of the butter, pour in your oats and create an even layer.


Next is the pumpkin. First put your pumpkin into a bowl and mix in the pumpkin spice. Drop the pumpkin mixture in dollops on top of the oats. Using an offset or rubber spatula, smooth out the pumpkin to create an even layer.


Top the pumpkin with butterscotch chips and then the chocolate chips.



Pour the can of condensed milk on top of everything. Make sure to get it in all the little crevices!


Sprinkle the chopped pecans on top of the condensed milk for the final layer and to top it all off. Place in the oven and bake for 50-60 minutes.


When you remove from the oven, allow to cool completely. You can speed up the process by throwing it in the refrigerator for a little while! Once it has cooled down, cut the tray of goodness into personal sized snack bars.


Serve anywhere, anytime. Store any extra bars in an airtight container for up to one week (if they last that long!) Enjoy!
