Peanut Butter Chocolate Chip Cookie Sandwiches

Now for today's recipe. I have such a weak spot for these cookies. The peanut butter cookie is so rich and the whipped frosting adds such a sweetness. They hit the spot every time.


Recipe yields 15 sandwiches

Ingredients
2 3/4 cups all-purpose flour
1 tsp baking soda
1 tsp kosher salt
1/2 cup unsalted butter
1/4 cup Crisco

1/4 cup peanut butter (I used extra crunchy, but smooth will also work)
1 cup light brown sugar
1 cup minus 2 tbsp white sugar
2 large eggs
1 1/2 tsp vanilla extract
1 1/2 cups semi-sweet chocolate chips


1 cup heavy cream
1/2 cup confectioners' sugar (more if you like it sweeter)




Preheat the oven to 350 degrees. In a medium bowl, whisk together flour, salt and baking soda.


In a separate bowl. mix butter, shortening and peanut butter.


Mix in brown and white sugars.


Add eggs and vanilla extract and beat until well combined.


Using a spoon, stir in the chocolate chips to evenly distribute.


In sections, add the dry ingredients and mix together with the spoon until just incorporated. Do not overmix.


Using a small cookie scoop, place balls of cookie dough on a greased baking sheet about an inch apart.


Bake for 8 minutes or until edges become golden brown.


Let cookies rest for 2 minutes on the baking sheet before moving them a cooling rack. Let cool for 15-20 minutes or until cookies become stiff.


While the cookies are cooling, you can prepare your frosting. Beat together the heavy cream and confectioners' sugar until stiff peaks form.


Coat the bottom of one cookie with frosting and use a second cookie to create the sandwich.


Be sure to hide these or they will be gone in no time. Enjoy!
