Spinach Salad with Curry Vinaigrette

This sure isn't your classic salad but the flavor combination is sure to soon make it one of your favorites. If you are looking to switch things up and try something new, this is a salad you will be happy you gave a try!


Recipe yields 6 servings

Ingredients
1/2 lb slab bacon
8 oz spinach
3 oz mushrooms

Dressing:
3 tbsp white wine vinegar
1 tbsp Dijon mustard
8 tbsp canola oil
1 tbsp curry powder


Cook the slab bacon in a frying pan until crispy. Set aside on a towel covered tray to cool completely. Peel and slice the mushrooms and set aside.

To make dressing, whisk together the dijon mustard and the white wine vinegar. Slowly whisk in the canola oil. Toast the curry powder in a saute pan for 1 minute or until it becomes fragrant. Whisk it into the dressing.



When ready to serve, toss together the spinach, mushrooms and bacon. Coat with curry vinaigrette. Serve and enjoy!
